1 C. chopped carrots
1 C. chopped leeks
1 C. chopped broccoli
1/2 C. chopped green onions

Ok, seriously, I love broccoli cheese soup, but what is a leek? I can't say that I've ever seen it in Wal-mart and it's about the only place to shop around her.

A leek looks like a very large green onion. I would ask if they carry them in the produce dept. at Wal-Mart. When you cook with leeks, you need to wash them very carefully because they have alot of dirt between the layers. Don't use the tough top part, just the tender bottom part. What I do is slice the leek in half length-wise and then slice in half circles. Then fill a bowl with cold water and toss in the sliced up pieces, being careful to separate the layers. The dirt will fall to the bottom of the bowl and the leek pieces will float on top. I hope you are able to find leeks in your area!

This sounds so good! I don't usually have much luck with cheese soups - the cheese doesn't melt smoothly for me but instead clumps or becomes grainy. Any advice?

This hasn't been a problem for me with this soup because Havarti melts well. This also isn't a really thick soup. If you give it a try, let me know how it works out!
